Recipe instructions
- Finely chop the shallots
- In an small saucepan, melt 25g of butter over a low heat and add the shallots.
- Turn up the heat and add the Champagne, bubble until it has reduced by half.
- Add the cream and reduce by half once more.
- Lower the heat and whisk in the butter, a little at a time.
- Season with salt and petter, and keep warm.
- Heat a ridged griddle pan, brush the salmon very lightly with ground nut or sunflower oil.
- Sear the salmon for no more than a minute on each side, just until it colours lightly.
- Slice the salmon into slices, roughly the width of your little finger.
- Fan out on a plate, and allow three slices per person.
- Drizzle the warm sauce add garnish with a teaspoon of caviar an a sprig of chervil.
- Serve with the rest of the fizz.
