Recipe instructions
- Bring a large pot of water to a boil. In a large skillet, sautv tomatoes in 1 tablespoon olive oil. Cook pasta according to package directions. While pasta is cooking, combine all dry ingredients in blender. Pulse for 10 seconds or until finely chopped.
- Drizzle in remaining olive oil and a few ice cubes slowly to create the pesto. Place pesto in bowl and add 1/2 cup pasta cooking liquid. Drain pasta and toss with pesto and tomatoes. Top with shredded cheese.
