Chef allen's red hot key lime chicken (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- In a glass dish, marinate the chicken with the key lime mojo for 1 hour.
- Preheat a large pan over medium heat.
- Remove the chicken from the marinate and pat dry with toweling paper.
- Add the oil to the pan and add the chicken in batches browning both sides for 4-5 minutes each.
- Add the onion, garlic, ginger, scotch bonnet and remaining marinate to the pan.
- Simmer for 20 minutes over medium heat, until the chicken is tender.
- Season with salt and add the cilantro to finish.
