Turkey basil summer rolls (recipe) is a keto friendly food item with net carbohydrates of 0-1 per serving.
Recipe instructions
- Heat a large non-stick skillet over medium-high. Coat pan with cooking spray. Add turkey and next three ingredients to pan; cook 5-7 minutes, or until turkey is no longer pink. Combine turkey and coleslaw mix in a medium bowl.
- Add hot water to a large, shallow dish to a depth of 1 inch. Place 1 rice paper sheet in dish; let stand 30 seconds, until just soft. Place sheet on a flat surface.
- Arrange 2 basil leaves on top third of sheet. Arrage 1/3 cup turkey mixture on bottom third of sheet. Folding sides of sheet over filling and starting with filled side, roll up jelly-roll fashion. Gently press seam to seal. Place roll, seam side down, on a serving platter, and cover with a damp towel.
- Repeat procedure with remaining sheets, basil, and turkey.
- Slice each roll in half diagonally. Serve with sesame-ginger dressing.
