- Core the red pepper and cut away the inner membranes. Slice celery, red pepper and pickles into small finger length sticks.
- Remove rind from the ham, if necessary, and cut each slice in half. Divide the vegetable sticks among the pieces of ham and season with pepper.
- Roll up the ham slices. Tie 2 or 3 chive stems around each wrap to garnish and hold it together.
