Shrimp and tomatoes (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- In large skillet, heat 1 tablespoons olive oil over high heat - swirl to coat the pan.
- Add half of the shrimp to the pan. Season with pepper and cook 3-4 minutes.
- Transfer to a plate and cover. Repeat with the remaining 2 teaspoons olive oil and rest of shrimp. Add those to covered dish.
- Reduce heat to medium. Add garlic and red pepper flakes. Stir in sliced tomatoes. Cook 4-6 minutes.
- Return cooked shrimp with any accumulated juices to the pan with the tomato mixture. Add lemon juice and parsley; toss to evenly coat. Place in serving bowl.

Note: This may be served as is or over your choice of cooked pasta, rice, or even spinach. Any salt added to the shrimp and tomatoes would be optional.
