Dan's tasty pork (recipe) is a keto friendly food item with net carbohydrates of about zero per serving.
Recipe instructions
- In a large pot combine apple juice concentrate, sugar and salt and add 5 cups water. While bringing to a simmer add bay leaf, peppercorns and thyme. Let simmer for 5 minutes and then cool completely (add ice cubes to speed this up). When completely cooled place the roast into the brine and weight it down to submerge. Brine the pork for 12 - 24 hours.
- Preheat oven to 375 degrees. Pat the roast dry, heat 2 tablespoons oil in large skillet. Brown roast on all sides, about 3 minutes per side. Place roast in a roasting pan and roast until the meat is at 160 degrees about 2 - 2 1/2 hours Remove from oven and let rest 10 minutes before carving
