Low-fat breakfast quesadillas (recipe) details

Recipe instructions

  1. Preheat oven to 450 degrees.
  2. In a klarge skillet sprayed with non stick cooking spray, saute onion and green pepper until tender.
  3. Add tomato and cook an additional 1 minute.
  4. Add next 5 ingredients (egg substitute through cumin).
  5. Cook until eggs are set.
  6. Place tortilla on a baking sheet.
  7. Sprinkle half of each tortilla with 1 Tbsp of cheese.
  8. Top with 1 cup of egg mixture, 1/4 of the bacon and an additional 1 Tbsp of cheese.
  9. Fold tortilla in half and spray with non stick cooking spray.
  10. Cook for approximately 5 minutes or until lightly browned and cheese is melted.
  11. Cut quesadilla into 4 triangles.
  12. Serve with salsa and fat-free sour cream.
