Chicken and yellow rice my way (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Saltl and pepper chicken on both sides. (Remember the broth/stock has salt in it as well as the rice mix so go easy).
- In a deep 10\inch skillet, brown chicken in olive oil, over medium hight heat, on both sides 3-5 minutes each side.
- Add onion, it'll be tight don't worry, and sautv another 3-5 minutes.
- Add thyme, garlic powder, and red pepper flakes. Stir to coat.
- Add rice mix and chicken stock, stir to submerge all rice and distribute rice seasonings. Reduce heat, cover and simmer 25-30 minutes, shaking several times, till rice is cooked but not mushy.
- Serve with your favorite veggies as a side.
- ENJOY!.
