Peanut and spice-covered pork tenderloin (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Preheat oven to 350 8F
- In a 12-inch ovenproof sautv pan, heat olive oil over medium-high heat. Add pork, and brown all sides, turning often to prevent burning, about 3 minutes total.
- In a small bowl, combine ginger, coriander, peanuts, and salt; mix well, and spread out on a baking sheet. Set aside.
- Place honey and mustard in another small bowl; stir to combine. With a rubber spatula, spread honey mixture all over pork, coating lightly.
- Roll pork in nut mixture, pressing firmly to adhere. Return pork to sautv pan, and transfer to oven.
- Finish cooking, 25-30 minutes or until internal temperature of pork registers 155F on a meat thermometer.
- Remove from oven; let sit 5 minutes. Cut into 1/4-inch thick slices; sprinkle with any topping that has fallen off.
