Recipe instructions
- Preheat the oven to 400 degrees.
- Spray the bottom of 2 small baking dishes with nonstick cooking spray (I used two 6 oz. au gratin dishes).
- Place the cut up Asparagus in the bottom of the each dish and bakefor 10 minutes.
- Remove the dishes from the oven and carefully slide two eggs on top of the asparagus per dish, and bakefor five minutes.
- When the eggs appear slightly set, remove from the oven and top with a sprinkle of garlic, salt, pepper and Parmesan Cheese.
- Place back in the oven for 3 minutes
