Baked veggie frittata (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Preheat oven to 375. Chop all vegetables and put in a bowl. Season with salt and pepper (or other seasoning) to taste. Add egg beaters, then feta and cottage cheese. Mix well.
- Coat baking dish with cooking spray. Pour mixture into dish. Top with parmesan cheese. Bakefor 45 minutes or until lightly brown on top.
