Recipe instructions

  1. Place roast, fat side up, on a rack in a shallow roasting pan.
  2. Sprinkle all over with garlic powder and rub into meat.
  3. Cut onion into slices, and put all over top of roast, and hold in place with tooth picks.
  4. Bakeat 350 8F for 2 hours or until meat thermometer registers 145 8F (med-rare).
  5. Let stand 10 minutes before slicing.
