Simple ropa vieja in the crockpot (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- Season flank steak with salt and pepper and sear/brown on both siides. Place in crockpot.
- Add remaining ingredients (except onion and bell pepper) and cook on LOW for 4 hours or HIGH for 2 hours.
- Saute onion and bell pepper until translucent. Add to crockpot.
- Cook for another 4 hours on LOW or another 2 hours on HIGH.
- Ropa vieja is done when you can shred it easily with two forks.
- Serve over yellow rice, with or without fried plantains.
