Recipe instructions

  1. Preheat oven to 325°F.
  2. Combine olive oil, garlic, oregano, salt and pepper.
  3. Rub mixture over lamb.
  4. Place lamb in roasting pan.
  5. Cook lamb uncovered for 90 minutes (30min/lb) to internal temp 145°F (go by temp, not by time!).
  6. Let lamb rest 10 minutes.
