Recipe instructions
- Preheat oven to 325°F.
- Combine olive oil, garlic, oregano, salt and pepper.
- Rub mixture over lamb.
- Place lamb in roasting pan.
- Cook lamb uncovered for 90 minutes (30min/lb) to internal temp 145°F (go by temp, not by time!).
- Let lamb rest 10 minutes.
