- Heat a wok or large skillet over high heat. Add oil. Add ginger and stir fry for 30 seconds. Add bok choy and stir fry for 1 minutes or until beginning to wilt.
- Add chicken stock and soy sauce to pan. Cover, turn heat to low and cook for 2 - 3 minutes or until bok choy is tender with a little bite to it. Season to taste with salt and pepper.
