Garlic-almond zucchini (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Cut off the ends of the zucchinis; quarter lengthwise; then cut crosswise into 3-inch-long wedges.
- Chop the almonds.
- Peel and finely chop the garlic.
- Heat the Olive Oil on a medium-high until hot.
- Add the zucchinis and season with salt and pepper. Cook, stirring occasionally, 4 to 6 minutes, or until lightly browned and slightly softened.
- Add the almonds and the garlic. Cook, stirring occasionally, 30 seconds to 1 minute, or until fragrant.
- Turn off the heat and stir in the lemon juice.
