Instructions[edit | edit source]

  1. In a large pot, heat the olive oil. Add onions and garlic, sautéing until translucent.
  2. Add the crushed tomatoes to the pot, followed by the vinegar, salt, pepper, basil, oregano, and sugar (if using). Allow the mixture to simmer for about 10 minutes.
  3. Add in the sliced zucchini and let the mixture simmer for an additional 10 minutes.
  4. Prepare your canning jars by sterilizing them. Ensure you have new, clean lids and rings.
  5. Fill each jar with the zucchini-tomato mixture, leaving about 1/2-inch headspace at the top.
  6. Wipe the rims of the jars with a clean cloth to remove any residue. Place the lids on the jars, and then screw on the rings until they're fingertip-tight.
  7. Process the jars in a boiling water bath for 40 minutes (adjust the time if you're at high altitude).
  8. Once done, remove the jars and allow them to cool completely. The lids should pop as they seal.
  9. Store in a cool, dark place.
