Recipe instructions
- Roast should be @ room temperature before you start cooking. Bakein open roaster pan 1 1/4 hours fat side up, in a 375 oven.
- Turn off oven and do not open the door.Leave the meat in unopened oven for about 2 hours.
- Forty five minutes before serving, sprinkle with salt and pepper turn oven to 300. You can add other spices if you would like.
- This recipe is fine for any size roast over 4 pounds. Count on one pound per person. All the slices will be the same shade of pink.
