  1. Heat oven to 350 8F Trim fat from beef flank steak. Place steak between two pieces waxed paper and pound to 1/2 inch thickness.
  2. Sprinkle mozzarella and Parmesan cheeses, parsley, seasoning and garlic over beef - just to within 1 inch of the edges.
  3. Roll beef up tightly lengthwise and tie tightly with string in 3-4 places to secure.
  4. Place in an ungreased square baking dish (8x8x2 works well) and then brush with the olive oil.
  5. Cover and bake45-50 minutes or until your desired level of doneness.
  6. Let stand 10 minutes before cutting into 1 inch slices prior to serving.
