Much healthier, lower carb granola bars (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions

  1. Preheat oven to 350 degrees.
  2. Mix all the ingredients except the 3 ounces of dark chocolate garnish in the large bowl of a food processor and process until chopped coarsely but until ingredients are still identifiable. Just make sure the coconut oil is distributed somewhat evenly. (If it's not completely distributed, it will be okay, as it will work itself out in the baking process..
  3. Dump the mixture on a flat baking sheet covered with parchment paper. I used one about 9x11. If you use a smaller one, the bars will be thicker, which is fine too. Your personal preference. Use your hands to pat and flatten the mixture down, making it as even as you can.
  4. Bakefor 15-20 minutes. There will be a bubbly surface from the oil when you take it out of the oven. This will go away as it cools. Let it cool completely.
  5. Melt the 3 ounces of chocolate. I used the microwave. Drizzle the chocolate over the cooking sheet. Cut the bars into 16 pieces or whatever size you desire. Refrigerate.
  6. Store in the fridge.
