Simply elegant frittata (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Fry bacon pieces in a 12\ oven-proof skillet until crispy.
- Using the bacon grease, add and brown the shallot and Simply Potatoes Diced Potatoes with Onion.
- While bacon is cooking, whisk together the eggs, half and half, basil, marjoram, salt, pepper, pepper flakes and sundried tomatoes.
- When potatoes are brown, turn off the heat. Add and layer evenly the spinach, bell pepper rings, and goat cheese crumbles over the entire top.
- Pour egg mixture over the potatoes, vegetables, and cheese.
- Bakein a 350F oven for 30-35 minutes, or until knife comes out clean.
- If desired, broil on high heat for 3-4 minutes to brown the top.
- Let the Frittata rest for 2 minutes before slicing into pie-shaped pieces.
