Simply elegant frittata (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions

  1. Fry bacon pieces in a 12\ oven-proof skillet until crispy.
  2. Using the bacon grease, add and brown the shallot and Simply Potatoes Diced Potatoes with Onion.
  3. While bacon is cooking, whisk together the eggs, half and half, basil, marjoram, salt, pepper, pepper flakes and sundried tomatoes.
  4. When potatoes are brown, turn off the heat. Add and layer evenly the spinach, bell pepper rings, and goat cheese crumbles over the entire top.
  5. Pour egg mixture over the potatoes, vegetables, and cheese.
  6. Bakein a 350F oven for 30-35 minutes, or until knife comes out clean.
  7. If desired, broil on high heat for 3-4 minutes to brown the top.
  8. Let the Frittata rest for 2 minutes before slicing into pie-shaped pieces.
