Spinach stuffed mushrooms (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions

  1. Preheat oven to 400 degrees F.
  2. Mix stuffing mix and hot water in large bowl; set aside.
  3. Remove stems from mushrooms; chop stems.
  4. Melt butter in large skillet on medium heat.
  5. Add chopped stems and the garlic; cook and stir until tender.
  6. Add to prepared stuffing along with the spinach and cheeses; mix well.
  7. Spoon evenly into mushroom caps.
  8. Place, filled-sides up, in shallow baking pan.
  9. Bake20 minute or until mushrooms are tender and filling is heated through.
