Chicken with prosciutto and mushrooms (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.

Recipe instructions

  1. Preheat oven to 350 degrees F.
  2. Season chicken lightly w/ saltl and pepper.
  3. In large nonstick skillet, brown chicken, half at a time, in olive oil 2-3 minutes per side.
  4. Transfer chicken to 3 quart rectangular baking dish In same skillet, cook and stir mushrooms, basil and garlic until mushrooms are tender.
  5. Remove from heat.
  6. Stir in proscuitto and tomatoes.
  7. Bakechicken breasts uncovered for 20 minutes.
  8. Spoon some of the mushroom mixture over each breast.
  9. Sprinkle w/cheese.
  10. Return to oven and bake5 minutes more.
