Recipe instructions
- Place 1/4 of the chopped leeks onto a square of baking paper. Place 1 chicken breast on top.
- Sprinkle with salt and pepper, place thyme sprig and lemon on top. Drizzle with olive oil.
- Wrap chicken breast in baking paper to create a parcel. Repeat with remaining 3 chicken breasts.
- Place on a baking tray and bakein a pre heated 180 8C over for 45 minutes or until chicken is cooked through.
- Serve with steamed beans, broccoli and asparagus with a light chicken gravy.
